Grabada por primera vez por George Michael a finales de los años ochenta, Fantasy iba a ser incluida en el segundo álbum solista del artista, el multiplatino y éxito mundial Listen Without Prejudice Vol.1. George quería publicar Fantasy como uno de los singles principales del álbum pero, por alguna razón, la canción quedó totalmente apartada del proyecto.
Finalmente, Fantasy encontró una salida en 1990 como la cara B del lanzamiento en Estados Unidos del single "Freedom! '90" y en la versión británica como cara B del single "Waiting for that day". Pero al ser una de sus canciones favoritas, George siempre había tenido la intención de que Fantasy fuera un single por derecho propio.
George Michael cantó Fantasy en directo durante su gira Cover To Cover en 1991 y regaló a sus fans cassettes con la canción, colocándolos en cada uno de los asientos de los recintos donde tocó a lo largo la gira. Casi una década después, George volvió a interpretar Fantasy durante su 25 Live Tour.
A principios de 2016, George buscaba el single perfecto para lanzar la esperada reedición de Listen Without Prejudice Vol.1/MTV Unplugged y Fantasy era, obviamente, la primera opción. Contactó con Nile Rodgers; hablaban el mismo lenguaje musical, estaban completamente de acuerdo, y el resto es historia.
